Piña Colada Green Smoothie Recipe

It has been crazy around here! Between working on this site, helping with one of my Facebook groups and handling a few other things, I haven’t had time to prepare any food! The good news is that this site in its final stages of development and I should be done with the finishing touches sometime tomorrow. I have been pouring the majority of my energy into getting this place just the way I want it so that I won’t have to be concerned with any more changes. Well, at least not for a while. Most of my older recipes and photos that I selected to use here have been loaded and formatted, so soon I can start focusing on creating new recipes, preparing food, and blowing the the dust off of my Nikon to photograph the dishes!
This Piña Colada Green Smoothie was my breakfast again this morning. It is one of my all-time favourite beverages and it is absolutely DE-LISH! I wasn’t going to post it here this soon, but I’ve recently received a few more recipe requests from my Facebook and MyFitnessPal buddies, so I decided to hurry up and get it here so that I could stop sending the recipe out individually.
Oh, and please forgive the quality of the image used for this post. At the time I made this smoothie I was too busy to breakout the Nikon, so this image was taken with my iPhone 4S (which I have not even begun to master yet). Though it gets the job done of showing what the smoothie looks like, it is a far cry from my usual blog image standards and it will be replaced when I make this smoothie again. I actually took this image just to include it in my Facebook Vegan Eats album. Now I’m glad I did.

Piña Colada Green Smoothie Recipe

Serves 2 | Vegan
Mise en place:
4 cups baby spinach leaves, preferably organic
1 cup fresh, ripe pineapple, diced and chilled
1 ripe banana, frozen
1/2 cup canned coconut milk
1 cup cold water
1 scoop vanilla protein powder*
2 tablespoons raw chia seeds
2 teaspoons agave nectar (or sweetener of your choice), optional
Add water, chia seeds and spinach to blender and process until all leaves are liquefied. Add remaining ingredients and continue blending until smooth. That’s it. It tastes even better if you let it sit in the fridge for a couple of hours. Enjoy!
*To make this 100% vegan, be sure to use a vegan protein powder, like soy, rice or hemp.

This looks delicious as well. I think I’m gonna stop look at the recipes for tonight because they makin me more hungry. lol

I still haven’t tried yours yet. Can’t seem to find any organic baby coconuts. Guess I’ll just have to use regular ones. I’ll give it a try and let you know this weekend. Oh, and if you know of an easy way to open them, please let me know. Thanks, Lys! ;-)

Thanks, Lys! That’s actually the way I usually open them and that is difficult to me. That’s the only reason I don’t use young coconuts very often. I’m thinking of using a miniature electric saw or something. lol
