Fruity Cucumber JuiceAnother quick post to share the recipe for one of the green juices (one of my faves) I made for breakfast last week (and again this morning) and to update my raw food and juice cleanse progress. This is another one that sort of fell through the cracks along with the raw recipes from last week that I didn’t write down, but since it’s pretty simple and straightforward, I feel pretty confident that I didn’t forget anything. Compared to many green juices, this cucumber, pear, apple and orange combination is light, mild and deliciously fruity and it packs a pretty good amount of potassium (293 mg) and over 100 percent of the RDA for vitamin C per serving. This blend is much lighter on the palate; a nice alternative to stronger-tasting green juices and heavier green smoothies.

Today is Day 7 of the cleanse and things are moving right along, but I must confess a slip up that I had last night. I haven’t really prepared any new dishes since the Spicy Raw Tacos I made last week because I’ve been trying to use up all of my leftovers. Well, last night I was craving more of those tacos, so I whipped up a batch, not realizing that I didn’t have any more lettuce to wrap them in. I was so desperate for them that in a moment of weakness, I used a red chile tortilla as the wrapper. Sad I know, but I was starving. Thank goodness the tortillas are vegan and organic, but they’re still not raw. While I will not make excuses, I will say that this would not have happened had I made the raw flax crackers and raw bread I was supposed to make this past weekend. But hey, it is what it is and I’m not going to beat myself up over it or stop the raw cleanse. I’m learning from it and moving on from here. Also, while I’m in confession mode I will admit to having a few visions of cooked food, but I’ve managed to keep it together and stay focused so far.

And now for the good news and signs that the cleanse is still working well. Again this morning I was pleasantly surprised to see that I released another 0.4 pounds, bringing my 6-day total to 6.0 pounds. After seeing such a significant weight loss in such a short amount of time, I decided to start tracking everything I eat again so that I will have a record of the vitamins and nutrients I’m taking in during this cleanse and to be sure I’m eating enough calories. Yesterday was my first day tracking and I was overjoyed to see that I had consumed just under 2,200 calories, hit most of my macro-nutrient targets (protein was a tad low at 67 g) and hugely exceeded my vitamin targets. This is great news, especially since the scale went down again this morning. I am well pleased. Can’t wait to see what today’s numbers look like.

Doing this raw food and fresh juice cleanse has really helped me to step up my juice game and I am absolutely loving it. I’m extremely excited that I’m finally juicing on a regular basis again and since I foresee even more juice in my future, I’ve decided to pull out my big gun – my Champion juicer. Now don’t get me wrong, I adore my trusty little Breville juicer, but there is a pretty big difference between it and my Champion. My Breville model is a light-weight juicer that is great for occasional juicing or regularly juicing small amounts, but since I’ll be preparing different green juices for a couple of days at a time, I’m going to need a bit more power behind me.

Fruity Cucumber Juice Recipe

Serves 2 | Raw Vegan

Mise en place:

3 large cucumbers, with peel
1 medium apple, pink lady or other sweet, juicy type
1 medium pear, ripe and juicy
1 medium orange, peeled
1/2 lemon, peeled

Juice and stir to blend. I’m not into super sweet juices, but feel free to add your favourite sweetener, if preferred.
